Winter Wonderland

Hello Everyone!

A few months ago we took our last camping trip of the season.

We had a beautiful site near a river. The trees were turning color and there was that incredibly delicious smell of Fall in the Pacific Northwest. We were only about an hour away from Mr. Rainier so we went up there and took a spectacle hike at the base of the mountain. There was plenty of snow but still light for the area. We were walking in a Winter’s Wonderland! So fresh and … cold. Luckily I packed my warm clothes 🙂

We don’t get much snow here. We are both originally from the East coast so our wintertime childhoods were spent in snow, snow and more snow. I loved it! Sledding, skating, snowball fights, and thawing out by the radiator with my sister. (We always stayed out too long!)

My husband and I agree, we could not live as adults in areas with winter snows, but as long as we can get to it now and then, it remains a lovely memory.

Stay warm and have a safe and happy winter to all those who get plenty of the white stuff. And fingers crossed we’ll get our 3-5 inches around Christmas time 🙂 Which, by the way shuts down the entire area! LOL.

Until next time, Peace and Love! V.

Christmas Eve

Happy Monday!!

I’ve written this in advance because – it’s Christmas Eve!! For all of you who celebrate this holiday you know the excitement and anticipation it can bring and the all the prep. Anyone reading this who has no one on Christmas — You have me!!! Happy Christmas! Make yourself something good to eat, watch a great movie or read a good book and reach out to a neighbor or someone else you know who might be alone at this time. I will be thinking of you 🙂 whoever you are.

For Christmas this year I wanted my book The Traveled Heart to get re-published in time to send it off to three different contests I had it entered in. (Follow future posts to see how I do in the contests) I had a few glitches with the first release and had to pull it. (Update- It is once again out in the world!! and better than before!!) Phew!! Writing is a fluid occupation!

Later today my daughters, their husbands and my five grandkids will be here to celebrate our togetherness. The bows and wrapping paper will fly, a few cups of juice will spill, my daughter may bring her violin and play Christmas tunes for us, there will be lots of laughs and the kids will run around my house as if they are outside and eventually every one will say they’ve eaten too much. It’s so much fun!

Mostly, we take time out of our busy lives to be together and to me that is the best present of all.

Peace, Love and Merry Christmas,

Veronica

Good Monday Morning Everyone!

Are we all ready for Christmas? I am. Really I am. No really … Maybe … Gotta Go!! Gingerbread cookies! 🙂

For my Christmas Eve family party I’m making pavlova for dessert. My inspiration came download

from The Food Network. You can find the recipe there.

It’s a light, delicious treat after a big meal. Sweet whipped and baked meringue, whipped cream and fruit, what more could one ask for? I made this for my husband when we were dating. It was so good I hardly remember the date …

Next Monday we’ll be putting up the party decorations and giving the final touches on our roast turkey, scalloped potatoes and roasted veggies. They’ll be lots of treats and appetizers too.

Wishing you all a great week and a wonderful Holiday Season!!

Peace and Love!

Salmon Salad Recipe

Good Monday Morning to You!

Here’s the salmon salad recipe I promised in an earlier post.

I usually don’t like canned fish in any way, but I was surprise how good this tasted.

So, get a can of deboned, de-skinned salmon.

1 glove of garlic – chopped fine

1 teaspoon grated ginger

1/2 stick of celery -chopped fine

1 tablespoon red onion – chopped fine

1/2 teaspoon of  spicy brown mustard

2 tablespoons of mayonnaise or slightly more or less depending on your taste for a wetter or dryer mix/ start with less and see how you like it.

Pinch of salt and pepper

Splash of Old Bay … that’s my added touch.

Mix well. This makes about two -three good sandwiches so double or triple recipe as needed.

You can fill any thing with this savory mix.

I think it will be one of my appetizers on Christmas Eve stacked on rounds of store bought puff pastry! Yum!

Wishing you all a great day and Happy December!

Peace and Love,

Veronica

Christmas Card #3

Good Monday Morning!

It’s getting close to Christmas and I have wrapped up my watercolor Christmas cards. This one was a joy to do and I want to thank Dana Fox at her youtube channel Wonder Forest. She is a great teacher and I will be following her in the future for more watercolor tutorials. I painted several of these with each one just a little bit different. I then took the painting and placed it on card stock with double stick tape.

I decided not to stamp a message on the front because I was sure my hand  would wobble and make a mess.

Hope you enjoyed seeing my Christmas cards!

See you next Monday 🙂  Have a great day!

Peace and Love,

Veronica
